Did you know that gelatin will NOT turn out if you use fresh pineapple?
Due to the presence of the chemical bromelain, fresh raw pineapple will cause your Jell-O mold to never set! Bromelain prevents the necessary chemical reaction which causes a chain of protein bonds in the gelatin. However, if you add CANNED pineapple instead, your gelatin dessert will be just fine. Why? Well, the canning process causes the bromelain to be inactivated as the pineapple is heated to a temperature around 158° F. So canned pineapple allows your gelatin to become gelled! Is canned pineapple better than fresh pineapple? It certainly is in this case!
