1/5 cups THRIFTY Flour .25 cup Cornmeal 1 Tablespoon Baking Powder 1 teaspoon Salt 2 Tablespoons Sugar 2 Tablespoons Becel oil, plus some for frying 0.75 cup Water
Place the flour, cornmeal, baking powder, salt and sugar into a bowl and combine. Create a dent in the center of the dry mixture and slowly add oil and then water. Gently mix until a loose dough forms. Move to a very lightly floured surface and gently knead into a ball. Cover and let rest for 15 minutes. Shape the dough into a long roll about 2-3 inches wide; cut into 18 evenly sized pieces. Shape each piece into a small ball and then flatten into 1.5 inch thick disks. Place a large skillet over medium heat and add enough oil to coat the bottom of the pan. When the oil is hot, fry the Johnny cakes in batches for 2-3 minutes each side, or until puffed and golden brown. Pat dry with paper towels and serve warm.
