INGREDIENTS: (not ordered according to quantity) pita bread, lamb, onions, garlic, canola oil, lemon juice, oregano, cumin, cucumbers, nonfat yogurt, mint, lettuce, tomatoes.
Recipe:
1 teaspoon canola oil 1/2 cup minced onion 1 clove garlic, minced 1/2 pound lean ground lamb 2 tablespoons lemon juice 1/2 teaspoon dried oregano 1/2 teaspoon ground cumin 1/2 cup seeded & diced cucumbers 1/4 cup nonfat yogurt, drained 1 tablespoon chopped fresh mint 2 pita or pocket breads 1/2 cup shredded lettuce 1/2 cup diced tomatoes
Heat oil in frying pan. Add onion & garlic & cook until soft over low heat stirring constantly. Place in mixing bowl with lamb, lemon juice, oregano & cumin. Mix thoroughly. Shape into two (2) patties. Place on broiler rack & broil 3-5 minutes on each side, turning once, or until desired doneness. Combine cucumber, yogurt, & mint in small bowl & mix. Cut around edge of each pita bread & pull open to form a pocket. Fill each pita with half the lettuce & tomato, one (1) lamb patty & half the yogurt mixture.
Makes 2 servings.
