2 Tbsp Vegetable oil 5 Onions, sliced 2 lbs Sirloin Steak Tips, roasted cut into 1 inch cubes 1 1/2 Tbsp Flour 1/4 tsp Marjoram 1/4 tsp Thyme 1/2 tsp Black Pepper, freshly ground 1/2 cup Beef Broth 1 cup Dry Red Wine 1/2 lb Mushrooms, sliced Vegetable Oil Spray
1. Lightly coat the surface of a large skillet with the vegetable oil spray.
2. Add 2 tablespoons of oil and place over a medium heat.
3. Add onions, sauté until tender, then remove them to a small bowl and set aside.
4. Add beef cubes and sauté until browned.
5. Sprinkle flour and seasonings on top of the beef cubes and stir well.
6. Add the broth and wine.
7. Stir well over reduced heat.
8. Simmer for 1.5-2 hours.
9. Add more broth and wine (1 part broth:2 parts wine) as needed for keeping the beef barely covered.
10. Return the onions to the skillet and add the mushrooms. Cook for 30 minutes more and stir frequently.
11. Add additional broth and wine, if necessary. The sauce should be thick and dark brown.
Makes 8 servings.
