1 can Mandarin Oranges (11 oz.)
½ cup Dreamland Barbecue Sauce
2 tablespoons honey
3 tablespoons red wine vinegar
1/8 teaspoon freshly ground pepper
1 (6-ounce) package pre-washed fresh baby spinach
¼ cup coarsely chopped pecans or walnuts, toasted
1/3 cup crumbled gorgonzola or other blue cheese
1. Drain oranges, reserving ¼ cup liquid. Set oranges aside.
2. For vinaigrette combine ¼ cup orange liquid, barbecue sauce, honey, vinegar, and pepper in a small bowl. Whisk until blended.
3. Place spinach in a large bowl and sprinkle with orange segments, walnuts, and crumbled cheese.
4. Serve immediately with barbecue vinaigrette.
Recipe yields 6 servings.
