Black Rice Sushi Salad

  • 1/2 cup Chinese black rice, such as Forbidden Rice
  • 2 cups cold water
  • 1 Tbsp. unseasoned rice vinegar
  • 2 tsp. sugar
  • 1/4 tsp. grated fresh ginger
  • 1/2 cup chopped orange bell pepper
  • 1/2 cup chopped peeled seedless cucumber
  • 1/4 cup finely chopped red onion
  • 1/2 slightly under ripe avocado, cut into 1/2-inch cubes
  • 24 cooked small (40-50 count) shelled shrimp
  • 1/4 cup finely chopped scallion, green part only

In medium saucepan, combine rice with 2 cups cold water. Bring to boil, reduce heat, and simmer, covered, until rice is tender, about 30 minutes. Drain the rice in colander, then rinse under cool water and drain well. Place rice in a mixing bowl.

In small saucepan, combine vinegar, sugar, and ginger. Set over medium heat and cook, swirling pan, just until sugar dissolves, 1-2 minutes. Add hot mixture to rice and toss with fork to combine. Add bell pepper, cucumber, and onion to rice and toss to combine. Gently mix in cubed avocado.

For each serving, scoop about 1 cup of rice mixture into a 6-ounce custard cup or other small bowl, and press gently with your fingers to pack it. Unmold rice in center of a salad plate. Lean 6 shrimp around the sides of the molded rice, encircling it. Or, spoon rice into center of plate, mounding it nicely, and lay shrimp in a ring around the edge of rice. Serve immediately.
